Bensdorp Barry Callebaut Ebony Cocoa is an intensely dark cocoa powder known for its striking colour and smooth chocolate flavour. Produced by Bensdorp, part of the Barry Callebaut group, this ebony cocoa is manufactured in Malaysia and contains 10 to 12 percent cocoa butter, giving it a fine texture that blends easily into baking mixtures.

Cocoa powder is made by fermenting, drying and roasting cocoa beans before grinding them into cocoa liquor. Much of the cocoa butter is then pressed out, leaving a solid cake that is milled into powder. Ebony cocoa undergoes heavy alkalisation, or Dutch processing, which darkens the powder dramatically and softens its acidity. This process creates an almost black cocoa with a smooth, mellow chocolate taste rather than the sharp bitterness of natural cocoa.

Also known as black cocoa or ebony cocoa, it is widely used in very dark baked goods such as sandwich biscuits, chocolate cookies, brownies and sponge cakes where deep colour is desired. It can also be blended with lighter cocoas for cakes, cupcakes, ice cream and dessert sauces, and is valued by bakeries for producing dramatic dark chocolate batters.
