Ground Ceylon Cinnamon, often called true cinnamon or Cinnamomum verum, is a finely milled spice made from the inner bark of cinnamon trees traditionally grown in Sri Lanka and parts of South Asia. Compared with common cassia cinnamon, Ceylon cinnamon has a lighter colour, delicate aroma and a softer, slightly sweet flavour.

In baking it adds warmth and fragrance to cakes, biscuits, muffins, cinnamon rolls, apple desserts and spiced breads. It blends easily into batters, fillings and sugar toppings, and is also used in porridge, custards, chocolate drinks and spiced beverages.

Beyond sweet baking, ground Ceylon cinnamon is used in savoury cooking, fruit preserves, chutneys and spice blends where a gentle cinnamon note is preferred.paired with apples and used in other fruit and cereal dishes. Stick Cinnamon is used in pickling and for flavouring hot beverages.
