Group 1 Ingredients
Eggs ? 0.450 kg
Water ? 0.400 kg
Pettina Instant Sponge Mix ? 1.000 kg
Total weight: 1.850 kg
Method
Place eggs and water into the mixing bowl.
Add Pettina Instant Sponge Mix and blend slowly to disperse the powders.
Whisk on fast speed for 8?10 minutes.
Prepare sponge tins (Bakels recommends greasing with Tinglide) and fill no more than ? full.
Bake at ?190 ?C for ?20 minutes, depending on sponge size.
The result is a light, fluffy sponge with improved volume, texture, and crumb?perfect for slicing, rolling, layering, filling, soaking with syrup, or covering in enough buttercream to make your dentist mildly concerned.
