Description
Pettina Vanilla Muffin Mix is a professional bakery premix from Bakels designed to produce soft, moist muffins with a light vanilla flavour and consistent crumb. This free flowing off white powder requires only the addition of eggs, vegetable oil and water to produce a smooth batter that bakes into tender muffins with good volume. The mix is versatile and can be customised with ingredients such as blueberries, apple pieces, chocolate chips, nuts or dried fruit.
Ingredients
Sucrose, wheat flour, vegetable fat and or oil, whey powder, maize starch, wheat gluten, sodium chloride, raising agents E500 and E450i, thickener E415, acidity regulator E330, flavouring.

Pettina Muffin Mix 1.000 kg
Water 0.200 kg
Eggs 0.300 kg
Vegetable oil 0.150 kg
Total batter weight approximately 1.650 kg.
Method
Place all ingredients except the vegetable oil into the mixing bowl and blend on slow speed for 1 minute. Scrape down and mix on medium speed for 2 minutes. Add the vegetable oil slowly over 1 minute on slow speed. Fold in fruit or other additions if desired. Fill muffin tins two thirds full and bake at approximately 200 C for about 15 minutes until baked through.
Suitable for muffins, cupcakes, snack cakes and bakery style variations. Store in cool dry conditions and keep packaging sealed to maintain quality.
