Royal Marzipan (Almond Paste)
Royal marzipan is a classic confection made from finely ground almonds and sugar, prized for its smooth texture and rich almond flavour. Originating in Europe and long associated with traditional baking, marzipan has been used for centuries in cakes, pastries and confectionery.
This almond paste, often simply called marzipan, is ideal for covering fruit cakes, where it forms the traditional almond layer beneath royal icing. It is also widely used for modelling decorations, shaping marzipan fruits, filling pastries, rolling into sweets, or blending into desserts where a natural almond taste is wanted.
Not to be confused with persipan, which is made from apricot or peach kernels with added almond flavouring rather than real almonds.
